With Christmas just around the corner, why not whip up this delicious Peanut Butter Rocky Road as a gift for your family or friends – or as a special festive treat for yourself!
Serves 12 | Gluten free | Dairy free
Ingredients
- 375g Whittaker’s Oat Milk Chocolate
- 40g peanut butter
- 1 teaspoon coconut oil
- 160g marshmallows, halved
- 75g granola, broken up
- 20g raw pistachios, roughly chopped
- 15g puffed rice
- 5g dried flowers to decorate (optional)
Method
- Line and grease a square baking tin, set aside.
- Place chocolate, peanut butter and coconut oil in a saucepan over a low heat. Stir gently until melted.
- In a separate bowl, combine marshmallows, 65g granola, pistachios and puffed rice, then pour over the melted chocolate and mix well.
- Transfer rocky road to the prepared tin and spread evenly. Sprinkle with remaining 10g granola and dried flowers if using.
- Refrigerate for 1 hour, then slice and serve.
